Baking with my best friend — Chocolate Cake

Today we decided it would be a good day to bake a cake. Tbh I’m always down for something sweet, so why not?

We went for a chocolate cake, but not just any chocolate cake! Do you know what a brigadeiro is?  It’s a little chocolate truffle with sprinkles made of condensed milk, a Brazilian delicacy.

NOW, without further ado, here is the recipe:



For the cake:

  • 5 eggs
  • 160g sugar
  • 240ml milk
  • 240g flour
  • 45g chocolate powder
  • 1 tsp baking powder

For the icing (and filling):

  • 2 cans of condensed milk
  • 2 tsp unsalted butter (or margarine)
  • 5 tsp (30g) chocolate powder
  • 1 tsp of melted chocolate


For the cake:

  1. Preheat the oven to 180C/350F/Gas 4. Grease and line a round 28cm diameter cake tin.
  2. Whisk the egg whites gradually adding the sugar and the egg yolks, one by one. Pour the milk, slowly. Continue whisking.
  3.  Incorporate the sifted flour with the chocolate powder and the baking powder.
  4. Pour the mixture in the cake tin and bake in the oven for 40 minutes, or until the top is firm to the touch and a skewer inserted into the centre of the cake comes out clean.
  5. Remove the cake from the oven and allow to cool completely, still in the tin, before icing.

For the icing (and filling):

  1. Bring the condensed milk, butter, milk and cocoa powder to boil, stirring constantly.
  2. When boiling, lower the heat and keep stirring for about 5 minutes or until you obtain a consistent cream.
  3. To assemble the cake, run a round-bladed knife around the inside of the cake tin to loosen the cake. Carefully remove the cake from the tin.
  4. Transfer the cake to a serving plate and ice the cake all over (don’t forget to fill it too) with the chocolate icing, using a palette knife.
